Not at all. It's declared policy states that security patches should be
available within 48 hours.
Usually they are available in less than 24 hours.

You have all the power you want to choose each particular version you
want, as long as
it's available in a .deb format. You can override dependencies if you
REALLY insist on
breaking things, you can request particular versions, you can pin a
version of a package so
it won't get updated come whatever.
